Fried Tom Yam Beehoon

Saturday night dinner always have to think where to eat because troublesome to bring 2 babies for dinner. So plan to cook simple food for dinner. I bought 1kg small lala in night market and prepare to cook lala beehoon. I have tomyam paste bought sometime ago. So I decided to fry tomyam lala beehoon.

Ingredients : Lala, Beehoon, Egg, Seafood taufu, Choi Sam (vegetable), Shallot, Garlic, Tomyam paste, Oyster sauce, Salt, Sugar

 
It is very simple cooking method. Just to fry the garlic and shallot until fragrance, then add in lala, beehoon andother ingredients to stir fry until mixed well. The only scary thing was I used 2 hours to take out lala meat from shell. Anyways, it is worth to do it after seeing everyone happy with their dinner.

Pandan Nasi Lemak (Pandan Coconut Rice)

In Malaysia, we can see nasi lemak every way. However pandan nasi lemak hardly sell in the market. When I worked in PJ, I ate pandan nasi lemak in 1 simple store in Paramount. It is cheap and nice. I always want to cook it, but I didn't cook the end because keep thinking that it is high colestrol food.

However during the weekend I saw fresh petai and the prawn in the market, so I cooked nasi lemak. My big boy knew I cooked the nasi lemak and he was happy. I never expected he will eat 3 bowls of pandan nasi lemak, so the end the pandan nasi lemak was not enough for 6 persons (I cooked 2 1/2 cup of rice). so the end he has to buy a packet of rice for my maid.

The ingredients are simple : Pandan leaves, 1 coconut, rice, salt, 2 slides ginger.

There was an extra step to cook pandan nasi lemak because I have to blend the pandan leaves with water, then take the pandan water to cook with rice. The method to cook the pandan rice just as usual on how to cook rice. I added 2 slides of ginger to get stronger fragrant smell.

Sambal Petai Udang

During the weekend marketing, I saw petai and the price of prawn quite reasonable. I decided to cook sambal petai udang. This dish enough for 6 persons.
Ingredients : petai, prawn, chili, onion, garlic, lemongrass, shallot, prawn paste, salt and sugar.




I blended garlic, shallot and lemasgrass together and fried it until fragrant smell and the colour turn light brown, after that I add in prawn paste and chili paste. Continue fried the ingredients till strong fragrant smell came out. I added 1 cup of water and lastly added petai, prawn, onion, salt and sugar. I continue cooked about 5 minutes because we prefer eat raw petai. I put more sugar (4 tsp) because we prefer sweet and spicy taste.

What shall we eat with this kind of dish...ah...We ate sambal petai udang with Pandan nasi lemak .

Weekend dinner

Weekend Dinner (1-6-13)

In every weekend dinner, we have not much choices if have to eat outside food because it is troublesome having a meal outside with 2 babies. So I will try to cook for my family members, so that we don't need to eat RM6-RM8 per pack "fried rice or noodles which is no ingredients except rice or noodles". Sometime I will choose to eat instant noodle instead of "ta pau" outside food, at least can put some vegetable and egg.

Our weekend dinner :)
1) Baked Chicken Bak Kao (RM5)
2) Ku Chai Egg Soup (RM5)
3) Stir Fried Kai Lan (RM3)
4) Belly Pork Sea Cucumber (RM100)
5) Smoked Duck (RM20)
6) Steam Taufu (RM5)


Some of the ingredients prepared in the morning after marketing, example the meat, ikan bilis soup and vegetables. The vegetables have to soak with water for few hours to clean chemical inside. I changed the water at least 2 times when I soak vegetables with water. This is one of the reasons why I don't like to eat outside food because not so hygience. I started to cook at 4 o'clock and the meals ready by 6 o'clock.
The ingredients estimated cost probably RM138 for 6 persons and total estimated cost RM168 included utility cost. The most expensive ingredient was sea cucumber. If we want to save cost, we replace it with fried dry bean curd (thick skin). Then the cost can reduce to RM110. The price for my time and effort to cook is priceless la....but happy can have a healthy meal for family member.
 
 

Baked Chicken Bak Kao
The chicken bak kao baked in a day before. I used the recipe from http://blessedhomemaker.blogspot.com/. I cut down the brown sugar, but the taste is not so nice. I will add more brown sugar next time and I will try again especially CNY because it can be healthy snack during CNY for my son & daughter (that time my daughter is about 16 months) because no presevative and artificial colouring, but I prefer pork bak kao instead of chicken bak kao because the meat more juicy (got more fat). I have to do 2 types of bak kao because my big boy didn't eat pork.
This dish was prepared to replace Belly Pork Sea Cucumber for my big boy.
 
 
 
Ku Chai Egg Soup
Ingredients : Ku Chai, Egg, Taufu, Ikan Bilis, Salt, Pepper (optional), Fried Shallot and Shallot Oil(optional).
I boiled the ikan bilis with water (it is for 6 persons) for about 1 hour. Keep the ikan bilis water. Add ku chai, egg and taufu into ikan bilis water. Boiled for 15 minutes, then add salt and pepper.
According to seller in wet market and the buyers, "Ku Chai" is good for health especially to clean our stomach, but the taste a bit bitter. It is not easy to find in market, so quite a lot of aunties like me grab a bundle of "Ku Chai". Next time I share the fresh "Ku Chai" photo with you, then you find in the market and can cook for your family member. 
I didn't add fried shallot and shallot oil because I gave to my son drink the soup. He like the soup, but not the vegetable because a bit bitter taste.
 
Stir Fried Kai Lan
Ingredients : Kai Lan, Carrot (for calouring), Garlic, Oyster sauce (optional), Soya sauce (replace salt since I used oyster sauce)
It is very simple dish. Add some oil to fry the garlic to get the garlic smell and turned light brown, then add in kai lan and carrot. Stir fried until its soft and turn light colour. Lastly add oyster sauce and soya sauce. I didn't chop the garlic into small pieces because my sister-in-law doesn't like the garlic.
 

Belly Pork Sea Cucumber
Ingredients : Belly Pork, Sea Cucumber, Dried Mushroom, Black Fungus, Garlic, Oyster sauce, Salt, Black sauce.
Stir fried all ingredients for a few minutes, add in oyster sauce, black sauce, salt and water. Turn to slow fire and cook it until it is soft. It is depending on how soft that we want, so I cook for about 1 1/2 hours. Add in 1 spoon corn flour (with water) to make the sauce thicker.
I used to eat it with chili padi and fresh garlic, but most of my family didn't eat in this way. So I only cut chili padi.

 


 
Smoked Duck
This smoked duck is ready made. My sister-in-law bought in Sabah. I just need to cut into slides and baked it by using oven. I just baked for 10 minutes (preheat oven).
Steam Taufu
Ingredients : Soft Taufu (for steam), Fried Shallot, Shallot oil, Oyster sauce, Soya sauce, Spring onion (for colouring)
I always fried shallot or onion and keep for a week use. So it save my time to fry shallot everytime and I use it for my packed lunch. I alway prepare my lunch in the morning (estimate 1 hour), then eat a simple and healthy food in the office because it is too hot to go out for a lunch.
I just put fried shallot, pour shallot oil and oyster sauce. Don't need to add water because the water inside taufu will come out after it is cooked. I didn't use spring onion because my sister-in-law didn't eat, so it will look better if add some spring onion. It is just take 15 minutes to steam under boiling water. Fast and easy preparation, yet healthy food...So no reason we eat outside!!!
