White Fungus Beancurd Dessert

I cook dessert because I plan to cook Pandan nasi lemak for dinner. The meal is spicy, so it is good if have something to cool down the heat. I guess the dessert is good choice since my 2 babies also can drink.

I didn't add egg into the dessert because at the moment my daughter still cannot eat egg. I used fresh lotus seed and gingko because managed to get it during my weekend marketing.

Ingredients : White fungus, Dried beancurd skin, Water chestnut, Fresh lotus seed, Fresh Gingko, Rock sugar, 1 pandan leaf.

I cut water chestnut into small cube. I boiled dried beancurd skin and water chestnut for 1/2 hour, then added rock sugar, fresh lotus seed and gingko because no need to cook too long for gingko and lotus seed. I used another small pot to cook white fungus for 1/2 hour, then leave it cool. I blended the white fungus after it cool. Mixed together and continue to boil both for another 1/2 hour.

The dessert was ready to drink after we have our dinner "Pandan nasi lemak". My family members and 2 babies like it except my big boy. Women in the family like it because it is good for skin. My big boy never like to drink my dessert except give face "1 bowl only ah..."

Casserole

I saw this recipe Casserole. So I made my own for Sunday breakfast. Initially I thought 2 eggs enough, but I added 1 more to make the casserole higher.

Ingredients : Mozallella cheese, Parmesan cheese, 3 eggs, 3 scoops condensed milk, 1 bundle spinach, salt, pepper.

It is quite simple recipe. Just to soften the spinach with boiling water. Then mixed all ingredients. I preheat the oven 180 degree for 15 minutes and it took about 45 minutes to bake.

After my effort to bake it, but my family members didn't really like it. Maybe too strong cheese taste. :(

Pandan Nasi Lemak (Pandan Coconut Rice)

In Malaysia, we can see nasi lemak every way. However pandan nasi lemak hardly sell in the market. When I worked in PJ, I ate pandan nasi lemak in 1 simple store in Paramount. It is cheap and nice. I always want to cook it, but I didn't cook the end because keep thinking that it is high colestrol food.

However during the weekend I saw fresh petai and the prawn in the market, so I cooked nasi lemak. My big boy knew I cooked the nasi lemak and he was happy. I never expected he will eat 3 bowls of pandan nasi lemak, so the end the pandan nasi lemak was not enough for 6 persons (I cooked 2 1/2 cup of rice). so the end he has to buy a packet of rice for my maid.

The ingredients are simple : Pandan leaves, 1 coconut, rice, salt, 2 slides ginger.

There was an extra step to cook pandan nasi lemak because I have to blend the pandan leaves with water, then take the pandan water to cook with rice. The method to cook the pandan rice just as usual on how to cook rice. I added 2 slides of ginger to get stronger fragrant smell.

See what happen on my weekend dinner : Pandan Nasi Lemak with Sambal petai udang

Sambal Petai Udang

During the weekend marketing, I saw petai and the price of prawn quite reasonable. I decided to cook sambal petai udang. This dish enough for 6 persons.
Ingredients : petai, prawn, chili, onion, garlic, lemongrass, shallot, prawn paste, salt and sugar.

I blended garlic, shallot and lemasgrass together and fried it until fragrant smell and the colour turn light brown, after that I add in prawn paste and chili paste. Continue fried the ingredients till strong fragrant smell came out. I added 1 cup of water and lastly added petai, prawn, onion, salt and sugar. I continue cooked about 5 minutes because we prefer eat raw petai. I put more sugar (4 tsp) because we prefer sweet and spicy taste.

What shall we eat with this kind of dish...ah...We ate sambal petai udang with Pandan nasi lemak .

Visiting EPF Klang

This morning I went to EPF department in Klang, to submit my application. I worried it could has long Q. So I reached there before 8am, just to ensure I will be the 1st person to submit the documents because I just took time off from my boss.

At 8.10am, the office is open to service customers. I was the first person to get the number. I just took 15 minutes to settle my submission with an Indian lady (I forgot to ask her name) to process my case. I was impressed by their service, with efficient and courtesy service.  I gave thumb up to EPF Klang!!!!

Back the years when I returned to work in Malaysia from Singapore, at that point of time I always complain to my friends that the government service in Malaysia was too lousy. It can take me half day to settle a case and I scared to step into government department because it is time consuming.

I believe if our government continue providing this kind of productivity, I'm sure we can succeed in future. Malaysia Boleh....
